Step into the Bar & Lounges for a luxurious drinking experience, with small-batch spirits, decadent cocktails and delicious dishes served throughout the day. Afternoon tea is served Tuesday to Saturday in the bar, lounges and gardens, with Newby London teas and all the classics.
Our Executive Head Chef
Creativity has always been at the heart of Nik Chappell’s work. While many chefs are praised for creating “pictures on plates”, Nik’s connection to artistry runs deeper — he originally trained as a fine artist before stepping into the kitchen.
Born and raised in Doncaster, South Yorkshire, Nik studied Fine Art at the University of Derby and initially planned to pursue a career in the arts. However, while working in local pubs during his studies, his passion for food quickly took centre stage. Inspired by the craft, creativity and camaraderie of the kitchen, Nik realised that cooking offered the perfect canvas for his artistic instincts.
Today, Nik brings that same artistic eye to his cooking, creating dishes that balance flavour, precision and visual elegance. His approach celebrates seasonal ingredients and thoughtful technique, delivering dining experiences that are both refined and full of character.

Please note the restaurant is closed for lunch and dinner on Sundays and Mondays. However, breakfast is still served for guests staying with us. Guests can also reserve dining at our sister property, The Slaughters Country Inn, just across the road.
